5 Star Lemon Cake

Temperatures are soaring, and summer is fast approaching. Or is it here already? I'm sharing a recipe for my favourite lemon cake. It's a five-star recipe. Absolutely foolproof. perfect for even the most amateur of bakers. It's fresh and zingy, and guaranteed to have everyone coming back for seconds (or thirds). Gorgeous with a tall glass of your favourite iced-brew; or by itself as a desert ... with some fresh cream.

  1. 1/2 cup butter

  2. 2 large eggs

  3. 1 cup ground sugar

  4. 2 tablespoons lemon juice

  5. 1/2 tea spoon salt

  6. 1 teaspoon baking powder

  7. 1 1/2 cup flour

  8. 1/2 cup milk

As icing:
  1. 1/3 cup lemon juice

  2. 1/4 cup sugar


Wet ingredients: Cream the butter and sugar. Stir in the eggs. Add lemon juice.

Mix in dry ingredients: salt, flour and baking powder.

Add in milk and mix well.

Add to a buttered pan and bake at 180 celsius for 30 minutes, or until golden brown.

Mix the lemon juice and sugar, and immediately after taking the cake out of the oven, poke holes across the top, and drizzle the icing in.

Let cake cool, and serve ~
